Herb Crusted Chicken


Chicken Breast (bone in for extra flavor)

Italian herb blend (oregano, basil, rosemary, sage)


Ground pepper

Optional: Crushed nuts (pistachios, or whatever.  Use food processor)


Preheat oven to 450 F and put a large cast iron skillet into the oven while it preheats.  Cover raw chicken breast with salt, Italian seasoning, pepper, and crushed nuts.  Add a little olive oil to the breast and mash the seasoning in so it sticks.  Take the cast iron out of the oven and heat it up a bit more on the stove so that it’s as hot as a branding iron.  Brown the chicken on the skillet (approx 2 mins on each side).  Place the hot skillet in the oven for 15-20 mins to finish cooking.   They will be cooked in 15 if they’re really skinny breasts, and 20 if they’re plump.
